On the latest episode of Coastline Cooks, Kim hands the reigns over to Coastline’s new dietitian Jamie Bucherri, who will now be the face of Coastline Cooks. Jamie has stepped into Kim’s position and will be handling all of the things Kim used to, including helping plan the Meals on Wheels menus, holding nutrition workshops around the community, sitting down one-on-one to do nutrition consultations, and coordinating Coastline’s Worksite Wellness Program. For their first recipe, Jamie and Kim made Flourless Peanut Butter cookies (adapted from Gluten Free Girl). These cookies are gluten-free and don’t have too much sugar in them. They are also quick and easy to make, with only five ingredients.

Ingredients:

  • 1 cup peanut butter (you can use chunky)
  • 2/3 cup sugar – plus extra for rolling
  • 1 teaspoon baking powder
  • 1 egg
  • Chocolate for drizzling (optional)

Preparation:

Preheat oven to 350º. Cream together peanut butter and sugar in a mixing bowl, then mix in the baking powder and egg until evenly combined. Form small balls and roll cookie dough mixture in extra sugar. Place evenly on a baking sheet and flatten slightly with a fork. Bake for 10-12 minutes. Let cool completely and then drizzle with chocolate.
